Main tasks:

Preparation

Cleaning, peeling, and cutting vegetables, herbs, and fruits.
Measuring, portioning, labeling, and storing ingredients.
Assisting in the preparation of sauces, purees, broths, and side dishes.
Prepping tortillas guacamole, salsa, and other condiments as required by the stations.

During Service

Cold station (Garde-Manger) operation - trained level: assembling salads, cold starters, ceviche, and chilled side dishes under the chef's supervision.
Taco station operation - trained level: heating tortillas, portioning fillings, preparing plates under the chef's or line cook's instruction.
Refilling ingredients and tools on all stations.
Providing and replacing GN pans, utensils, and plates as needed.
Keeping all work areas clean and organized througout service.

Cleaning and Hygiene

Washing dishes, cookware, GN pans, knives, and utensils by hand and machine.
Cleaning and sanitizing work surfaces, fridges, shelves, floors, drains, and equipment daily.
Handling and separating waste properly (bio / mixed / glass / oil).
Filtering and cleaning fryers, using cleaning chemicals correctly and safely.

Storage and Logistics

Assisting with deliveries: unpacking, checking quality, and storing according to FIFO.
Labeling, dating, and organizing all products in fridges and freezers.
Preparing and holding out ingredients to stations as requested.

Requirements

Phone and smoke breaks only at scheduled times.
No eating or experimenting with food during work.
Reports any mistake or accident immediately to the chef.
Cleans, put everything back, and leaves the station functional.
End of day: the kitchen must be clean, organized. and ready to open

Working Conditions

8-12 hour shifts, indlucing evenings and weekends.
Continuous standing, lifting, working in hot and humid environments.
Proper uniform required: closed shoes, apron, cap or hairnet.

Speed: completes every task on time, keeps the pace without rushing carelessly.
Accuracy: no guessing - measures and portions correctly by gram, piece, or portion size.
Endurance: handles heat, noise, pressure, and long shifts without complaint.
Teamwork: works together with others, doesn't argue, doesn't slow the team down.
Communication: short, clear, and direct - no unnecessary talk, no back-and-forth.
Willingness to learn: remembers what is shown and repeats it exactly next time,
Hygiene, always clean and well-groomed: short nails, covered hair, clean uniform.
Responsibility: reports mistakes immediately, doesn't hide or blame others.
Loyalty: respects the workplace, the food, the team, and the guests - no gossip, no stealing, no sabotage.
Stamina: able to handle long (10-12 hour) shifts, repetitive work, and physical effort.
Precision: keeps everything in order, puts tools and items back where they belong - no "later"
Flexiblity: adapts quickly to changes without complaining or asking three times.
Respect: the superior's word is rule, not a debate.
